Cheesy Spinach Dip

Ingredients

  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 4 cups fresh spinach, chopped (or 1 package frozen spinach, thawed and drained)
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional, for a bit of heat)

Instructions

  1. Preheat the oven: Set your oven to 180°C (350°F).
  2. Sauté the spinach: In a skillet over medium heat, add olive oil and sauté the garlic until fragrant, about 1 minute. Add the fresh spinach and cook until wilted, about 3-4 minutes. If using frozen spinach, skip this step.
  3. Combine ingredients: In a large mixing bowl, combine the cream cheese, sour cream, mayonnaise, mozzarella, Parmesan, salt, black pepper, and red pepper flakes. Stir in the cooked spinach until everything is well combined.
  4. Bake the dip: Transfer the mixture to a baking dish and smooth the top. Bake in the preheated oven for 15-20 minutes, until the dip is hot and the cheese is melted and bubbly.
  5. Serve: Remove from the oven and serve warm with crackers, bread slices, or veggies for dipping.
