Ingredients:
- 1 lb boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil, divided
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 bell pepper, thinly sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 1/2 cup sliced mushrooms
- 1/4 cup teriyaki sauce (store-bought or homemade)
- Cooked rice, for serving
- Sesame seeds and sliced green onions, for garnish (optional)
Instructions:
- Marinate the chicken: In a bowl, combine the sliced chicken breasts with the soy sauce and cornstarch. Toss until the chicken is evenly coated. Let it marinate for 15-30 minutes.
- Prepare the vegetables: While the chicken is marinating, prepare the vegetables by slicing the bell pepper, julienned the carrot, and slicing the mushrooms.
- Stir fry the chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken to the skillet and stir-fry for 4-5 minutes, or until cooked through. Remove the chicken from the skillet and set aside.
- Cook the vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, and sauté for 1-2 minutes until fragrant. Add the sliced bell pepper, broccoli florets, julienned carrot, and sliced mushrooms to the skillet. Stir-fry for 5-6 minutes, or until the vegetables are crisp-tender.
- Combine everything: Return the cooked chicken to the skillet with the vegetables. Pour the teriyaki sauce over the chicken and vegetables, stirring well to coat everything evenly. Cook for an additional 2-3 minutes, until heated through.
