Instructions

  1. Cook the lentils: In a medium pot, combine the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer until lentils are tender, about 25 minutes. Drain excess liquid if necessary.
  2. Prepare the filling: In a large skillet over medium heat, heat olive oil. Add diced onion and minced garlic, cooking until softened, about 5 minutes. Stir in the diced carrots and cook for another 5 minutes.
  3. Combine filling ingredients: Add the cooked lentils, frozen peas, corn, tomato paste, soy sauce, thyme, rosemary, salt, and pepper to the skillet. Stir well and cook for an additional 5-7 minutes, allowing the flavors to meld. Transfer the mixture to a greased 9-inch pie dish or baking dish.
