Ingredients:

For the Pasta:

  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 1/2 cups heavy cream
  • 1 teaspoon dried Italian seasoning
  • 2 cups fresh spinach leaves
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain the pasta and set aside.
  2. Sauté the chicken: Season the thinly sliced chicken breasts with salt and black pepper. In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken slices to the skillet and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove the cooked chicken from the skillet and set aside.
  3. Prepare the sauce: In the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes until fragrant. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Reduce the heat to low and stir in the heavy cream and dried Italian seasoning. Simmer gently for 2-3 minutes until the sauce starts to thicken slightly.
  4. Add the spinach and cheese: Stir in the fresh spinach leaves and grated Parmesan cheese into the sauce until the spinach wilts and the cheese melts into the sauce.
  5. Combine everything: Return the cooked chicken slices to the skillet, stirring gently to coat them in the creamy sauce. Add the cooked pasta to the skillet, tossing well to coat the pasta evenly with the sauce.
