Ingredients:
– 8 cups beef broth
– 1 pound beef sirloin, thinly sliced
– 8 oz rice noodles
– 1 onion, sliced
– 3 cloves garlic, minced
– 1-inch piece of ginger, sliced
– 2 star anise
– 2 cinnamon sticks
– 3 cloves
– 2 tablespoons fish sauce
– 1 tablespoon soy sauce
– Salt and pepper, to taste
– Optional toppings: fresh bean sprouts, thinly sliced green onions, fresh cilantro, Thai basil leaves, lime wedges, thinly sliced jalapeños
Instructions:
1. Prepare the broth: In a large pot, combine the beef broth, sliced onion, minced garlic, sliced ginger, star anise, cinnamon sticks, and cloves. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes to allow the flavors to develop.
2. Prepare the noodles: While the broth is simmering, cook the rice noodles according to the package instructions. Once cooked, drain and rinse them under cold water to stop the cooking process. Set aside.
3. Prepare the beef: Thinly slice the beef sirloin against the grain. You can partially freeze the beef for easier slicing.
4. Season the broth: After simmering for 30 minutes, remove the onion, garlic, ginger, star anise, cinnamon sticks, and cloves from the broth. Stir in the fish sauce and soy sauce. Season with salt and pepper to taste.
5. Assemble the bowls: Divide the cooked rice noodles among serving bowls. Top with the thinly sliced beef.
6. Pour the hot broth: Ladle the hot broth over the noodles and beef in each bowl. The hot broth will cook the beef slices.
7. Add toppings: Serve the pho hot, accompanied by optional toppings such as fresh bean sprouts, thinly sliced green onions, fresh cilantro, Thai basil leaves, lime wedges, and thinly sliced jalapeños.
