Maple Pecan Pie Bars

Ingredients

Shortbread Crust

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 tsp salt

Maple Pecan Filling

  • 3/4 cup pure maple syrup
  • 1/2 cup packed brown sugar
  • 3 large eggs
  • 2 tbsp unsalted butter, melted
  • 1 tbsp vanilla extract
  • 1/4 tsp salt
  • 1 1/2 cups pecans, roughly chopped

Instructions

  1. Prepare the crust: Preheat your oven to 175°C (350°F). Line a 9×9-inch baking pan with parchment paper. In a medium bowl, mix flour, sugar, melted butter, and salt until well combined. Press the mixture into the bottom of the prepared pan, spreading evenly. Bake for 15-18 minutes, or until golden. Set aside.
  2. Make the filling: In a large mixing bowl, whisk together the maple syrup, brown sugar, eggs, melted butter, vanilla extract, and salt until smooth. Stir in the chopped pecans.
  3. Bake the bars: Pour the pecan filling over the baked crust, spreading it evenly. Bake for 25-30 minutes or until the filling is set and golden brown. Let cool in the pan for 1 hour.
  4. Cut and serve: Once the bars have cooled, lift them out using the parchment paper and transfer to a cutting board. Slice into squares and enjoy!
