Mediterranean Chicken Salad recipe

Ingredients:

For the Grilled Chicken:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste

For the Salad:

  • Mixed greens (such as baby spinach, arugula, and romaine lettuce)
  • Cherry tomatoes, halved
  • Cucumber, sliced
  • Red onion, thinly sliced
  • Avocado, sliced
  • Kalamata olives, pitted
  • Feta cheese, crumbled

For the Lemon Vinaigrette:

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon honey or maple syrup
  • Salt and black pepper, to taste

Instructions:

  1. Marinate the Chicken: In a shallow dish, whisk together the olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper. Add the chicken breasts to the marinade, turning to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  2. Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Remove the chicken breasts from the marinade and discard any excess marinade. Grill the chicken for 6-8 minutes per side, or until cooked through and no longer pink in the center. Remove from the grill and let rest for a few minutes before slicing.
  3. Prepare the Salad: In a large salad bowl, combine the mixed greens, halved cherry tomatoes, sliced cucumber, thinly sliced red onion, avocado slices, and pitted Kalamata olives. Toss gently to combine.
  4. Make the Lemon Vinaigrette: In a small bowl, whisk together the extra-virgin olive oil, fresh lemon juice, Dijon mustard, minced garlic, honey or maple syrup, salt, and black pepper until emulsified.
  5. Assemble the Salad: Arrange the sliced grilled chicken over the prepared salad. Sprinkle with crumbled feta cheese. Drizzle the lemon vinaigrette over the salad just before serving.
  6. Serve: Toss the salad gently to coat everything in the dressing. Serve immediately, and enjoy the refreshing flavors of the Mediterranean!
