Ingredients:

  • 2 tablespoons soy sauce
  • 2 tablespoons mirin (Japanese sweet rice wine)
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil, divided

For the Stir Fry:

  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 cup snap peas or snow peas
  • Cooked rice or noodles, for serving
  • Sesame seeds and sliced green onions, for garnish (optional)

Instructions:

  1. Marinate the Beef: In a mixing bowl, combine the thinly sliced flank steak with soy sauce, mirin, honey or brown sugar, rice vinegar, minced garlic, grated ginger, and cornstarch. Toss to coat the beef evenly in the marinade. Let it marinate for at least 15 minutes, or up to 30 minutes.
  2. Stir Fry the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated beef to the skillet in a single layer, allowing it to sear without overcrowding the pan. Cook for 2-3 minutes, stirring occasionally, until the beef is browned and caramelized.   3. Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onion, bell pepper, broccoli florets, and snap peas or snow peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
  4. Combine Beef and Vegetables: Return the cooked beef to the skillet with the sautéed vegetables. Pour the remaining teriyaki marinade over the beef and vegetables in the skillet. Stir well to combine and coat everything in the sauce.
