  • 8 oz spaghetti pasta
  • 4 oz pancetta or bacon, diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese, plus extra for serving
  • Freshly ground black pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. Cook the pasta: Cook the spaghetti pasta in a large pot of salted boiling water according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  2. Crisp the pancetta: While the pasta is cooking, heat a large skillet over medium heat. Add the diced pancetta and cook until crispy and golden brown, about 5-7 minutes. Remove the pancetta from the skillet and set aside, leaving the rendered fat in the skillet.
  3. Prepare the sauce: In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and freshly ground black pepper until well combined.
  4. Assemble the carbonara: Add the minced garlic to the skillet with the rendered pancetta fat and cook for 1-2 minutes until fragrant. Remove the skillet from the heat and add the cooked spaghetti pasta, tossing to coat evenly in the pancetta fat.
  5. Add the egg mixture: Pour the egg and Parmesan mixture over the hot pasta, tossing quickly to coat the pasta and create a creamy sauce. If the sauce seems too thick, gradually add some of the reserved pasta water to thin it out.
  6. Serve: Divide the spaghetti carbonara among serving plates. Top each serving with the crispy pancetta pieces and an extra sprinkle of grated Parmesan cheese. Garnish with chopped fresh parsley, if desired. Serve immediately and enjoy your taste of Italy!
