Taco Stuffed Bell Peppers

Ingredients:

  • 4 large bell peppers, any color
  • 1 lb (450g) lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • Optional toppings: diced tomatoes, sliced green onions, chopped cilantro, sour cream, salsa, avocado slices

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a baking dish large enough to hold the bell peppers.
  2. Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Place the hollowed-out bell peppers in the prepared baking dish, standing upright.
  3. Cook the Filling: In a skillet over medium heat, cook the ground beef, diced onion, and minced garlic until the beef is browned and the onions are translucent. Drain any excess fat from the skillet.
  4. Assemble the Filling: Add the cooked rice, black beans, corn kernels, and taco seasoning to the skillet with the cooked beef mixture. Stir well to combine and heat through.
  5. Stuff the Bell Peppers: Spoon the beef and rice mixture into each bell pepper, packing it down gently and mounding it on top. Press the mixture firmly to ensure it stays in place.
  6. Bake the Stuffed Peppers: Sprinkle shredded cheddar cheese over the top of each stuffed bell pepper. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the bell peppers are tender and the filling is heated through.
