Ingredients:
- 2 tablespoons vegetable oil
- 14 oz firm tofu, pressed and cubed (optional)
- 2 cups broccoli florets
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 carrot, julienned
- 1 cup snow peas
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- Cooked rice or noodles, for serving
- Sesame seeds and sliced green onions, for garnish (optional)
Instructions:
- Prepare the tofu (if using): If using tofu, press it between paper towels or a clean kitchen towel to remove excess moisture. Cut the tofu into cubes and set aside.
- Make the stir-fry sauce: In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, and sesame oil. Set aside.
- Cook the tofu (if using): Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
- Stir fry the vegetables: In the same skillet, heat the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, and sauté for 1-2 minutes until fragrant. Add the broccoli florets, bell peppers, carrot, and snow peas. Stir fry for 4-5 minutes, or until the vegetables are tender-crisp.
- Combine everything: Return the cooked tofu to the skillet with the vegetables. Pour the stir-fry sauce over the tofu and vegetables. Stir well to coat everything evenly with the sauce. Cook for an additional 1-2 minutes, until heated through.
- Serve: Serve the veggie stir fry hot over cooked rice or noodles. Garnish with sesame seeds and sliced green onions, if desired.
