Ingredients:

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional, for extra heat)
  • Salt and black pepper, to taste
  • Olive oil, for cooking
  • Toppings: shredded cheese, sour cream, chopped green onions, cilantro, tortilla chips, etc.

Instructions:

  1. Cook the beef: Heat a large pot or Dutch oven over medium heat. Add a drizzle of olive oil, then add the ground beef. Cook, breaking up the beef with a spoon, until browned and cooked through.
  2. Sauté the aromatics: Add the diced onion, minced garlic, and diced bell pepper to the pot with the cooked beef. Sauté for 5-7 minutes, until the vegetables are softened and aromatic.
  3. Add the beans and tomatoes: Stir in the drained and rinsed kidney beans and black beans, diced tomatoes, and tomato paste.
  4. Season the chili: Pour in the beef broth and add the chili powder, ground cumin, paprika, and cayenne pepper (if using). Season with salt and black pepper to taste. Stir well to combine.
  5. Simmer: Bring the chili to a simmer, then reduce the heat to low. Cover and let the chili simmer for at least 30 minutes to allow the flavors to meld together, stirring occasionally.
  6. Serve: Ladle the beef chili into bowls and garnish with your favorite toppings, such as shredded cheese, sour cream, chopped green onions, cilantro, or tortilla chips.
