  • 8-10 small flour tortillas
  • Optional toppings: shredded cheese, sour cream, guacamole, salsa, chopped cilantro, lime wedges


  1. Marinate the chicken: In a mixing bowl, combine the olive oil, lime juice, minced garlic, ground cumin, chili powder, smoked paprika, salt, and black pepper. Add the sliced chicken to the marinade and toss until evenly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld.
  2. Sauté the vegetables: Heat the vegetable oil in a large skillet or cast-iron pan over medium-high heat. Add the sliced onion and bell peppers to the skillet and sauté for 5-6 minutes, or until softened and slightly charred around the edges. Remove the cooked vegetables from the skillet and set aside.
  3. Cook the chicken: In the same skillet, add the marinated chicken strips in a single layer. Cook for 6-8 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.
  4. Assemble the fajitas: Warm the flour tortillas in the skillet or microwave until soft and pliable. Spoon some of the cooked chicken and sautéed vegetables onto each tortilla. Add your favorite toppings, such as shredded cheese, sour cream, guacamole, salsa, chopped cilantro, and a squeeze of lime juice.
  5. Serve: Roll up the tortillas into fajitas and serve immediately, accompanied by extra toppings and lime wedges on the side.
