Ingredients:
- 2 pounds (900g) Yukon Gold or Russet potatoes, peeled and cubed
- 1 head of garlic
- 4 tbsp unsalted butter (divided)
- 1/2 cup milk (or heavy cream)
- Salt, to taste
- Black pepper, to taste
- Chives or parsley, for garnish (optional)
Instructions:
- Roast the garlic: Preheat your oven to 200°C (400°F). Cut the top off the head of garlic to expose the cloves.
