Giada's Simple Bolognese

 Ingredients:

– 2 tablespoons olive oil

– 1 onion, finely chopped

– 2 carrots, peeled and finely chopped

– 2 celery stalks, finely chopped

– 2 cloves garlic, minced

– 1 pound ground beef (or a mixture of beef, pork, and veal)

– 1/2 cup dry white wine

– 1 (28-ounce) can crushed tomatoes

– 2 tablespoons tomato paste

– 1 teaspoon dried oregano

– 1 teaspoon dried basil

– Salt and pepper, to taste

– 1/4 cup chopped fresh parsley

– Cooked pasta, for serving

– Grated Parmesan cheese, for serving

 Instructions:

1. Heat olive oil: In a large skillet or Dutch oven, heat the olive oil over medium heat.

2. Sauté vegetables: Add the chopped onion, carrots, and celery to the skillet. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

3. Brown the meat: Increase the heat to medium-high. Add the ground beef (or beef mixture) to the skillet. Cook, breaking up the meat with a spoon, until browned and cooked through, about 5-7 minutes.

4. Deglaze with wine: Pour in the dry white wine and let it simmer for a couple of minutes, scraping up any browned bits from the bottom of the skillet.

5. Add tomatoes and seasonings: Stir in the crushed tomatoes, tomato paste, dried oregano, and dried basil. Season with salt and pepper to taste. Reduce the heat to low and let the sauce simmer, uncovered, for about 20-30 minutes, stirring occasionally, to allow the flavors to meld and the sauce to thicken.

6. Finish and serve: Once the sauce has thickened to your desired consistency, stir in the chopped fresh parsley. Taste and adjust seasoning if needed. Serve the Bolognese sauce over cooked pasta, garnished with grated Parmesan cheese.
