Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts
  • 2 chipotle peppers in adobo sauce, minced
  • 2 tablespoons adobo sauce (from the chipotle pepper can)
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • Corn tortillas
  • Your favorite taco toppings (such as shredded lettuce, diced tomatoes, diced onions, chopped cilantro, sliced avocado, lime wedges, and sour cream)

Instructions:

  1. Marinate the Chicken: In a bowl, whisk together minced chipotle peppers, adobo sauce, minced garlic, lime juice, ground cumin, smoked paprika, dried oregano, salt, black pepper, and olive oil. Place the chicken breasts in a resealable plastic bag or shallow dish, and pour the marinade over them. Toss to coat the chicken evenly. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  2. Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard the excess marinade. Grill the chicken breasts for 6-8 minutes per side, or until cooked through and no longer pink in the center. Remove from the grill and let rest for a few minutes before slicing.
  3. Prepare the Toppings: While the chicken is grilling, prepare your favorite taco toppings. Shred lettuce, dice tomatoes and onions, chop cilantro, slice avocado, and cut lime wedges.
  4. Assemble the Tacos: Slice the grilled chicken breasts into thin strips. Warm the corn tortillas on the grill or in a skillet until softened and heated through. Fill each tortilla with the sliced chipotle chicken and your desired toppings.
