Hummus Veggie Wrap


– 4 large whole wheat tortillas

– 1 cup hummus (store-bought or homemade)

– 2 cups mixed salad greens (such as spinach, arugula, or mixed baby greens)

– 1 large cucumber, thinly sliced

– 1 large carrot, grated or julienned

– 1 bell pepper, thinly sliced (any color you prefer)

– 1/2 red onion, thinly sliced

– 1/4 cup crumbled feta cheese (optional)

– Salt and pepper, to taste

– Optional add-ons: sliced avocado, roasted red peppers, olives, sprouts


1. Prepare the tortillas: Lay out the whole wheat tortillas on a clean, flat surface.

2. Spread the hummus: Divide the hummus evenly among the tortillas and spread it evenly, leaving a small border around the edges.

3. Layer the veggies: Layer the mixed salad greens, sliced cucumber, grated carrot, bell pepper slices, and red onion slices evenly on top of the hummus-covered tortillas.
