Ingredients:
For the Pulled Pork:
- 3-4 pounds pork shoulder (also known as pork butt), trimmed of excess fat
- Salt and black pepper, to taste
- 1 tablespoon olive oil
- 1 onion, diced
- 4 cloves garlic, minced
- 1 cup barbecue sauce, plus extra for serving
- 1 cup chicken broth or water
For the Coleslaw:
- 4 cups shredded cabbage (green or purple)
- 1 carrot, grated
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and black pepper, to taste
For Serving:
- Soft hamburger buns or sandwich rolls
Instructions:
- Prepare the Pulled Pork: Season the pork shoulder generously with salt and black pepper. In a large Dutch oven or slow cooker, heat the olive oil over medium-high heat. Sear the pork shoulder on all sides until browned, then remove it from the pot and set aside.
- Sauté the Aromatics: In the same pot, add the diced onion and minced garlic. Sauté for 2-3 minutes until softened and fragrant.
- Slow Cook the Pork: Return the seared pork shoulder to the pot. Pour in the barbecue sauce and chicken broth or water, ensuring that the pork is covered with liquid. Cover and cook on low heat for 6-8 hours in the slow cooker or 3-4 hours in the Dutch oven, until the pork is tender and easily shreds with a fork.
- Shred the Pork: Once the pork is cooked, use two forks to shred it into bite-sized pieces right in the pot. Stir the shredded pork to coat it evenly in the barbecue sauce.
- Prepare the Coleslaw: In a large bowl, combine the shredded cabbage and grated carrot. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and black pepper to make the coleslaw dressing. Pour the dressing over the cabbage mixture and toss until evenly coated.
