Beef and Vegetable Stew Recipe

Ingredients:
- 1 1/2 pounds stew beef, cut into bite-sized pieces
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 stalks celery, diced
- 2 potatoes, peeled and diced
- 1 cup frozen peas
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- Chopped fresh parsley, for garnish (optional)
Instructions:
- Brown the beef: Season the stew beef generously with salt and black pepper. In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat. Add the seasoned beef to the pot and cook, stirring occasionally, until browned on all sides. Remove the beef from the pot and set aside.
- Sauté the aromatics: In the same pot, add the diced onion and minced garlic. Sauté for 2-3 minutes until softened and fragrant.
- Simmer the stew: Return the browned beef to the pot, along with the diced carrots, celery, potatoes, and frozen peas. Pour in the beef broth and diced tomatoes (with their juices). Stir in the bay leaves, dried thyme, dried rosemary, and paprika. Bring the stew to a simmer.
- Cook the stew: Reduce the heat to low, cover the pot, and let the stew simmer gently for 1 1/2 to 2 hours, or until the beef is tender and the vegetables are cooked through. Stir occasionally and skim off any excess fat that rises to the surface.
- Adjust seasoning and serve: Taste the stew and adjust the seasoning with salt and black pepper, if needed. Discard the bay leaves. Ladle the Beef and Vegetable Stew into bowls, garnish with chopped fresh parsley if desired, and serve hot.
