Chicken Enchiladas Recipe

Ingredients:

  • 2 cups shredded cooked chicken (rotisserie chicken works great)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (4 oz) diced green chilies, drained
  • 1 can (14 oz) enchilada sauce
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and black pepper, to taste
  • 8 small flour or corn tortillas
  • 2 cups shredded Mexican blend cheese
  • Chopped fresh cilantro, for garnish
  • Sliced jalapeños, for garnish (optional)
  • Sour cream, for serving
  • Sliced avocado, for serving
  • Lime wedges, for serving

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. Prepare the chicken filling: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes. Stir in the shredded chicken, diced green chilies, ground cumin, chili powder, salt, and black pepper. Cook for 2-3 minutes, stirring occasionally, until the chicken is heated through and well combined with the seasonings.
  3. Assemble the enchiladas: Spoon a portion of the chicken mixture onto each tortilla and roll it up tightly. Place the rolled enchiladas seam-side down in the prepared baking dish.
  4. Top with sauce and cheese: Pour the enchilada sauce evenly over the rolled enchiladas in the baking dish. Sprinkle the shredded cheese over the top of the enchiladas.
  5. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the enchiladas are heated through and the cheese is melted and bubbly.
  6. Serve: Remove the foil from the baking dish and garnish the Chicken Enchiladas with chopped fresh cilantro and sliced jalapeños, if desired. Serve hot with sour cream, sliced avocado, and lime wedges on the side.
