  • 1 lb beef sirloin or tenderloin, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 3 cups beef broth
  • 8 oz egg noodles
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)


  1. Brown the beef: Heat the vegetable oil in a large pot over medium-high heat. Add the thinly sliced beef and cook until browned on all sides. Remove the beef from the pot and set aside.
  2. Cook the aromatics: In the same pot, add the chopped onion and minced garlic. Cook until softened and fragrant, about 2-3 minutes. Add the sliced mushrooms and cook until they release their juices, about 5 minutes.
  3. Simmer with broth: Return the browned beef to the pot. Pour in the beef broth and bring to a simmer. Add the egg noodles and cook according to the package instructions, stirring occasionally, until the noodles are tender and the liquid has reduced.
