– 1 can (10 ounces) Rotel Original Diced Tomatoes & Green Chilies

– 1/2 cup heavy cream

– 1 cup shredded cheese (such as cheddar or Monterey Jack)

– Salt and pepper, to taste

– Fresh parsley, chopped (for garnish, optional)


1. Cook the pasta: Cook the pasta according to the package instructions until it’s al dente. Drain and set aside.

2. Prepare the sauce: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until they’re softened and fragrant, about 2-3 minutes.
