Ingredients:
– 1 pound ground beef
– 1 cup uncooked orzo pasta
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 1 red bell pepper, diced
– 1 can (14.5 ounces) diced tomatoes
– 2 cups beef broth
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– Salt and pepper, to taste
– Grated Parmesan cheese, for serving
– Chopped fresh parsley, for garnish
Instructions:
1. Cook the ground beef: In a large skillet or frying pan, brown the ground beef over medium-high heat, breaking it apart with a spatula as it cooks. Once the beef is browned and cooked through, remove any excess fat from the skillet.
2. Add the aromatics: Add the chopped onion and minced garlic to the skillet with the ground beef. Cook for 2-3 minutes, or until the onion is softened and translucent.
3. Add the vegetables: Stir in the diced red bell pepper and cook for an additional 2-3 minutes, until the pepper is slightly softened.
4. Add the orzo and tomatoes: Add the uncooked orzo pasta and diced tomatoes (with their juices) to the skillet. Stir everything together until well combined.
5. Pour in the broth and seasonings: Pour the beef broth into the skillet, and season the mixture with dried oregano, dried basil, salt, and pepper. Stir well to combine.
6. Simmer the orzo: Bring the mixture to a simmer, then reduce the heat to medium-low. Cover the skillet and let the orzo simmer for about 10-12 minutes, or until the orzo is cooked through and most of the liquid is absorbed, stirring occasionally to prevent sticking.
