Easy Egg Fried Rice

Ingredients:

  • 3 cups cooked rice (preferably chilled)
  • 2 tablespoons vegetable oil
  • 3 eggs, lightly beaten
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 cloves garlic, minced
  • 2 green onions, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper, to taste
  • Sesame seeds and sliced green onions for garnish (optional)

Instructions:

  1. Heat the oil: In a large skillet or wok, heat the vegetable oil over medium heat.
  2. Scramble the eggs: Pour the beaten eggs into the skillet and let them cook undisturbed for a few seconds until they start to set around the edges. Using a spatula, gently scramble the eggs until they’re cooked through but still slightly moist. Remove the scrambled eggs from the skillet and set aside.
  3. Cook the vegetables: In the same skillet, add the minced garlic and mixed vegetables. Stir-fry for 2-3 minutes, or until the vegetables are tender but still crisp.
  4. Add the rice: Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir-fry the rice with the vegetables for another 2-3 minutes, allowing the rice to heat through and become slightly crispy.
  5. Season the rice: Drizzle the soy sauce and oyster sauce (if using) over the rice. Season with salt and pepper to taste. Stir well to combine, ensuring that the rice is evenly coated with the sauce.
  6. Add the eggs: Return the scrambled eggs to the skillet with the rice and vegetables. Stir everything together until the eggs are evenly distributed throughout the rice.
  7. Garnish and serve: Transfer the egg fried rice to a serving dish. Garnish with sesame seeds and sliced green onions if desired. Serve hot as a delicious side dish or as a main course.
