– 8 ounces dried pasta (such as penne or fusilli)

– 1 tablespoon olive oil

– 1 pound spicy Italian sausage, casings removed

– 1 onion, finely chopped

– 3 cloves garlic, minced

– 1 can (14.5 ounces) diced tomatoes

– 1/2 cup chicken broth

– 1 teaspoon dried oregano

– 1 teaspoon dried basil

– 1/2 teaspoon crushed red pepper flakes (adjust to taste)

– Salt and pepper, to taste

– Grated Parmesan cheese, for serving

– Fresh basil leaves, for garnish


1. Cook the pasta:  Cook the pasta according to the package instructions until al dente. Drain and set aside.

2. Prepare the sauce: In a large skillet, heat the olive oil over medium heat. Add the spicy Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes.

3.  Add aromatics: Add the chopped onion and minced garlic to the skillet with the sausage. Cook, stirring occasionally, until the onion is softened and translucent, about 3-4 minutes.

4. Simmer the sauce: Stir in the diced tomatoes (with their juices), chicken broth, dried oregano, dried basil, and crushed red pepper flakes. Season with salt and pepper to taste.

Bring the mixture to a simmer and let it cook for 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly.

5. Combine the pasta and sauce: Add the cooked pasta to the skillet with the sauce. Toss everything together until the pasta is well coated with the sauce.
