 Ingredients:

– 1 pound ground elk meat

– 1/2 cup diced green chiles (canned or fresh)

– 1/4 cup breadcrumbs

– 1 egg

– 2 cloves garlic, minced

– 1 teaspoon ground cumin

– 1 teaspoon smoked paprika

– Salt and pepper, to taste

– 4 burger buns

– Optional toppings: lettuce, tomato slices, avocado slices, sliced red onion

 Instructions:

1. Prepare the grill: Preheat your grill to medium-high heat.

2. Mix the burger ingredients: In a large mixing bowl, combine the ground elk meat, diced green chiles, breadcrumbs, egg, minced garlic, ground cumin, smoked paprika, salt, and pepper. Mix until everything is evenly combined.

3. Form the burger patties: Divide the mixture into 4 equal portions. Shape each portion into a patty, making sure they’re slightly larger than the size of your burger buns, as they will shrink a bit during grilling. Make a slight indentation in the center of each patty to prevent them from bulging while cooking.

4. Grill the burgers: Place the burger patties on the preheated grill. Cook for about 4-5 minutes on each side, or until they reach your desired level of doneness. Elk meat is lean, so be careful not to overcook them to keep them juicy.

5. Toast the buns: While the burgers are grilling, lightly toast the burger buns on the grill until they’re warm and slightly crispy.

6. Assemble the burgers: Once the burgers are cooked, remove them from the grill and let them rest for a minute. Place each burger patty on a toasted bun, and if desired, top with lettuce, tomato slices, avocado slices, and sliced red onion.
