  • 1 whole chicken (about 4-5 lbs)
  • 1 lemon, halved

  • 1/2 teaspoon black pepper
  • 1 onion, quartered

  2. Prepare the Chicken: Remove any giblets from the chicken cavity and pat the chicken dry with paper towels. Place the chicken on a roasting rack set inside a roasting pan.
  3. Season the Chicken: Rub the minced garlic all over the chicken, both inside the cavity and on the skin. Squeeze the lemon halves over the chicken, then place them inside the cavity.
