Ingredients:
- 1 whole chicken (about 4-5 lbs)
- 1 lemon, halved
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons fresh herbs (such as rosemary, thyme, and parsley), chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion, quartered
- 2 carrots, cut into chunks
- 2 celery stalks, cut into chunks
Instructions:
- Preheat the Oven: Preheat your oven to 425°F (220°C). Place a rack in the middle position of the oven.
- Prepare the Chicken: Remove any giblets from the chicken cavity and pat the chicken dry with paper towels. Place the chicken on a roasting rack set inside a roasting pan.
- Season the Chicken: Rub the minced garlic all over the chicken, both inside the cavity and on the skin. Squeeze the lemon halves over the chicken, then place them inside the cavity. Drizzle olive oil over the chicken and sprinkle with chopped herbs, salt, and black pepper, rubbing gently to coat evenly.
- Add Aromatics: Scatter the quartered onion, carrot chunks, and celery chunks around the chicken in the roasting pan. These aromatics will add flavor to the chicken and vegetables.
- Roast the Chicken: Place the roasting pan in the preheated oven and roast the chicken for 15 minutes at 425°F (220°C) to brown the skin. Then reduce the oven temperature to 375°F (190°C) and continue roasting for about 60-75 minutes, or until the internal temperature of the chicken reaches 165°F (75°C) in the thickest part of the thigh.
- Rest and Serve: Once the chicken is cooked through, remove it from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, resulting in a juicier chicken. Carve the chicken and serve with the roasted vegetables and pan juices.
Delight in the exquisite flavors and succulent texture of Succulent Lemon Herb Roast Chicken, a timeless dish that brings warmth and comfort to any gathering or family meal.
