Taco Stuffed Bell Peppers

Ingredients:

  • 4 large bell peppers, any color
  • 1 lb (450g) lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • Optional toppings: diced tomatoes, sliced green onions, chopped cilantro, sour cream, salsa, avocado slices

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a baking dish large enough to hold the bell peppers.
  2. Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Place the hollowed-out bell peppers in the prepared baking dish, standing upright.
  3. Cook the Filling: In a skillet over medium heat, cook the ground beef, diced onion, and minced garlic until the beef is browned and the onions are translucent. Drain any excess fat from the skillet.
