Quinoa and Black Bean Salad

Ingredients:

  • 1 cup quinoa, rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and black pepper, to taste
  • Avocado slices, for serving (optional)
  • Lime wedges, for serving (optional)

Instructions:

  1. Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the water is absorbed. Remove from heat and let it cool slightly.
  2. Prepare the Salad Ingredients: In a large mixing bowl, combine the cooked quinoa, black beans, corn kernels, diced red bell pepper, finely chopped red onion, and chopped cilantro.
  3. Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and black pepper until well combined.
  4. Assemble the Salad: Pour the dressing over the quinoa and black bean mixture, tossing gently to coat all the ingredients evenly.
  5. Chill and Serve: Cover the bowl with plastic wrap or transfer the salad to an airtight container. Refrigerate for at least 30 minutes to allow the flavors to meld and the salad to chill. Before serving, taste and adjust seasoning if needed. Serve chilled, garnished with avocado slices and lime wedges if desired.
