Ingredients:
- 1 lb beef sirloin or tenderloin, thinly sliced
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 3 cups beef broth
- 8 oz egg noodles
- 1 cup sour cream
- 2 tablespoons all-purpose flour
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish (optional)
Instructions:
- Brown the beef: Heat the vegetable oil in a large pot over medium-high heat. Add the thinly sliced beef and cook until browned on all sides. Remove the beef from the pot and set aside.
- Cook the aromatics: In the same pot, add the chopped onion and minced garlic. Cook until softened and fragrant, about 2-3 minutes. Add the sliced mushrooms and cook until they release their juices, about 5 minutes.
- Simmer with broth: Return the browned beef to the pot. Pour in the beef broth and bring to a simmer. Add the egg noodles and cook according to the package instructions, stirring occasionally, until the noodles are tender and the liquid has reduced.
- Make the sauce: In a small bowl, whisk together the sour cream and flour until smooth. Stir the sour cream mixture into the pot until well combined. Season with salt and pepper to taste.
