Craving a comforting and hearty meal without the fuss? This One-Pot Beef Stroganoff Recipe is the answer! Tender beef, savory mushrooms, and egg noodles simmered in a creamy sauce, all cooked in one pot for easy cleanup.

Ingredients:

  • 1 lb beef sirloin or tenderloin, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 3 cups beef broth
  • 8 oz egg noodles
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. Brown the beef: Heat the vegetable oil in a large pot over medium-high heat. Add the thinly sliced beef and cook until browned on all sides. Remove the beef from the pot and set aside.
  2. Cook the aromatics: In the same pot, add the chopped onion and minced garlic. Cook until softened and fragrant, about 2-3 minutes. Add the sliced mushrooms and cook until they release their juices, about 5 minutes.
  3. Simmer with broth: Return the browned beef to the pot. Pour in the beef broth and bring to a simmer. Add the egg noodles and cook according to the package instructions, stirring occasionally, until the noodles are tender and the liquid has reduced.
  4. Make the sauce: In a small bowl, whisk together the sour cream and flour until smooth. Stir the sour cream mixture into the pot until well combined. Season with salt and pepper to taste.
  5. Finish and serve: Continue to cook for another 2-3 minutes, or until the sauce has thickened slightly. Remove from heat and garnish with chopped fresh parsley, if desired. Serve hot and enjoy your comforting One-Pot Beef Stroganoff!
