Ingredients:
- 1 lb boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons vegetable oil
- 2 cups mixed vegetables (bell peppers, broccoli, snap peas, carrots)
- 3 cloves garlic, minced
- 2 teaspoons ginger, minced
- ¼ cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 2 green onions, thinly sliced
- Cooked rice or noodles, for serving
Instructions:
- Prepare the sauce: In a small bowl, whisk together the soy sauce, oyster sauce, honey, and sesame oil. Set aside.
- Cook the chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
- Stir fry the vegetables: In the same skillet, heat the remaining tablespoon of vegetable oil. Add the mixed vegetables, garlic, and ginger. Stir fry for 3-4 minutes, or until the vegetables are tender-crisp.
- Combine everything: Return the cooked chicken to the skillet. Pour the prepared sauce over the chicken and vegetables. Stir well to coat everything evenly with the sauce. Cook for an additional 2-3 minutes, or until heated through.
- Serve: Sprinkle sliced green onions over the chicken stir fry. Serve hot over cooked rice or noodles.
