Ingredients:

  • 8 oz (225g) fettuccine pasta
  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 bell pepper, thinly sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to the package instructions until al dente. Drain the pasta, reserving 1/2 cup of the pasta cooking water. Set aside.
  2. Season and Cook the Chicken: In a mixing bowl, toss the thinly sliced chicken breasts with Cajun seasoning until evenly coated. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken to the skillet and cook for 5-6 minutes, or until cooked through and no longer pink in the center. Remove the chicken from the skillet and set aside.
  3. Prepare the Sauce: In the same skillet, add minced garlic, chopped onion, and sliced bell pepper. Sauté for 3-4 minutes, or until the vegetables are softened and aromatic. Pour in the heavy cream and chicken broth, stirring to combine. Season with salt and black pepper to taste.
  4. Simmer the Sauce: Reduce the heat to medium-low and let the sauce simmer for 5-7 minutes, or until slightly thickened and creamy. Taste and adjust seasoning if needed.
  5. Combine Pasta and Chicken: Add the cooked fettuccine pasta and cooked chicken slices to the skillet with the creamy Cajun sauce. Toss everything together until the pasta and chicken are evenly coated in the sauce. If the sauce is too thick, you can add some of the reserved pasta cooking water to loosen it up.
  6. Serve: Divide the Creamy Cajun Chicken Pasta among serving plates. Garnish with chopped fresh parsley, if desired, and serve hot.
