Instructions:

  1. Preheat the Oven: Preheat your oven to 425°F (220°C). Place a rack in the middle position of the oven.
  2. Prepare the Chicken: Remove any giblets from the chicken cavity and pat the chicken dry with paper towels. Place the chicken on a roasting rack set inside a roasting pan.
  3. Season the Chicken: Rub the minced garlic all over the chicken, both inside the cavity and on the skin. Squeeze the lemon halves over the chicken, then place them inside the cavity. Drizzle olive oil over the chicken and sprinkle with chopped herbs, salt, and black pepper, rubbing gently to coat evenly.
